Aptly named because that is what I exclaimed when I first tasted this dish! Vegetables... so good for you, but sometimes you want them to give you the same feeling that biting in to a fork full of In-n-Out animal fries does. But let's be honest, that doesn't happen. Don't get me wrong, there are all kinds of ways to prepare vegetables to make them taste amazing. But until I created this recipe I had never blurted out an expletive to express how good my veggies tasted. Anyone else feel like this? Kale smoothie? Animal fries? I know what I'd pick if there were no negative health effects... However lately I have been craving this broccoli dish all the time. Quick, easy, delicious...my fave 3 musts in a recipe. I think I was shocked how good something this good for you could taste. And all my ingredients are from Trader Joes!
1 package broccolini (organic)
2 tablespoons coconut oil (organic + virgin)
3 cloves minced garlic (obsessed with garlic, so always adding more, but 1 clove is ok too)
generous splashes of rice wine vinegar, sesame oil + soy sauce
1/2 a lemon (organic)
red pepper flakes
healthy pinch pink himalayan sea salt
freshly ground pepper
All the steps are super easy + fast. But the details of preparing the dish add to the end flavor!
-"off with their heads" (broccolini's heads)- cut the flowering heads off on a cutting board you can move easily. I use my shun knife for all my cutting
-give them a rough chop (they will break a part quite a bit but thats what you want
-then cut the stems in to 1/4" thin batons and dice them
-heat a lodge cast iron pan over medium-high heat
-add 1-2tablespoon(s) coconut oil
-make sure your oil gets nice + hot
-add your chopped + diced broccoli in
-let cook for a couple minutes, moving it around with a wooden spoon
-add another tablespoon of coconut oil, a nice pinch of himalayan pink salt + pepper, give it a stir again.
-let the broccolini basically fry up in the small puddle of oil.
-then lower the heat and add the splashes of rice wine vinegar, sesame oil + soy sauce.
-next squeeze half a lemon (this makes me think of led zepplin... anyone else?) the lemon juice deglazes the pan + really boosts the flavor to the next level
-dish it up! make sure to get all the little fried bits of the flowering heads, and drizzle the sauce over them!
-Top with red pepper flakes
Seriously so good I could make the whole serving just for myself!
Broccolini might be the worlds healthiest food. It helps removes toxins + free radicals from the body. Helps maintain healthy glowing skin. Strengthens your immune system. So broccoli for life!
Lemon of course gives a whopping dose of vitamin c which also removes free toxins in the body. It detoxifies your liver! It is alkalizing as well so it helps with indigestion. I know, most people think lemon is acidic therefore not alkalizing, but it is! Love me some lemon!
Coconut oil has powerful fatty acids which actually aid in burning fat + can help blood cholesterol levels.
Pink himalayan salt increases hydration + like lemon is alkalizing so good for indigestion. And helps body detox of heavy metals. A really good salt choice verses table salt.
